While the property perpetuates a history that family archives trace back to 1794, it affirms its contemporary identity through the central role given to its emblematic cuvée N° 7 . Today, this wine, which can be placed among the leading expressions of the region, is not merely a technical achievement in blending: it stands as the emblem of a refined tradition, found even on the tables of Michelin-starred restaurants.

The Boyer saga: a quiet revolution

Traditionally discreet, the Boyer family is now stepping out of its shell. Infusing its new communication with a strong emphasis on its values, this lineage of winemakers reaffirms its commitment to a tradition marked by elegance. While Jacques and Françoise spearheaded the estate's renewal in 1977, they have entrusted the reins of contemporary winemaking to their sons, Emmanuel and Benoît. Originating from the initial Jacques Boyer & Fils, the La Croix Belle estate currently manages seventy hectares of vines with rigorous viticultural practices: meticulous plot selection, density-based sorting of the harvest, and a strong environmental commitment. In doing so, the property confirms its enduring presence among the leading Languedoc wines, producing exceptional, certified organic wines.

The N° 7 vintages: three wines, three harmonies of grape varieties

The Cuvées N° 7 were born of bold craftsmanship and patient cellar work. They also stand as an emblematic expression of the affinity that the terroir of the Côtes de Thongue holds for the art of blending grape varieties. While a strong regional tendency, particularly within the IGP Pays d'Oc , favours single-varietal wines, the Boyer family chose a different path, guided by both foresight and measured audacity. They embraced the added complexity of crafting a rare balance: each N° 7 cuvée brings together seven grape varieties in a unified composition. Through precise adjustment of each red, white or blended wine, La Croix Belle seeks to convey with clarity the sun-drenched, wind-shaped terroir of the Côtes de Thongue.

White No. 7

N° 7 Blanc is a structured and elegant wine, resulting from a blend of Chardonnay, Grenache Blanc, Viognier, Rolle, Sauvignon Blanc, Grenache Gris and Carignan Blanc. The composition, refined through twelve months of ageing in oak barrels, shows precision and balance, with restrained mineral notes and nuances of dried fruit.

A composed expression of the southern vineyards, N° 7 Rouge brings together Syrah, Grenache, Mourvèdre, Cabernet Franc, Merlot, Petit Verdot and Cabernet Sauvignon in a balanced blend. After twelve months of ageing in oak barrels, the wine shows a firm structure, with pronounced spice notes and discreet toasty nuances.

No. 7 rosé

The more limited N° 7 Rosé completes the trilogy, bringing a note of clarity and finesse. A blend of Mourvèdre, Syrah, Grenache Noir, Merlot, Cabernet Sauvignon, Petit Verdot and Cabernet Franc, it reflects meticulous craftsmanship that shapes its character as a Languedoc rosé. This gastronomic cuvée brings together tradition and modernity in a tasting profile marked by Mediterranean influences.

A gastronomic delegation

The estate’s renewed communication leaves little ambiguity: Cuvée N° 7 stands as a defining signature, expressing the identity of a longstanding winegrowing family. IGP Côtes de Thongue: a Mediterranean terroir ideal for rosés

Located in Hérault, between Béziers and Pézenas, theIGP Côtes de Thongue extends over a terroir that contributes to the rich variety of Languedoc's wine heritage. The vineyard benefits from a typically Mediterranean climate, marked by hot, dry summers but tempered by maritime influences and local winds. What makes this PGI so interesting is that it is made up of a mosaic of soils. Here, Villafranchian terraces, clay-limestone and rolled pebbles alternate, providing a soil resource suited to a wide range of grape varieties.

rosés from the IGP Côtes de Thongue draw their character from this combination where geological richness resonates with the Mediterranean climate. Grenache, Cinsault and Syrah, traditional southern grape varieties, are of course favored for their freshness and vibrant fruitiness. Other varieties such as Mourvèdre or Carignan, or even more northern grape varieties such as Pinot Noir or Cabernet Franc, provide additional structure and complexity. This variety of grape varieties increases the aromatic palette of the rosés tenfold. Marked by notes of small red fruits enhanced with floral and mineral touches, these wines retain a beautiful liveliness on the palate.

Declined with this latitude of nuances which make the charm of the appellation, they establish themselves as authentic ambassadors of the terroir of Côtes de ThongueTheir delicate colors deliver clear shades that range from pale pink to slightly deeper salmon highlights. On the nose, these clear wines display an aromatic palette of delicious finesse. The most characteristic aromas evoke raspberry, redcurrant, wild strawberries, white flowers and sometimes citrus fruits.
