Art and culture

À Belaygues Castle the vineyard has a soul. It is perceived from the first meeting with Severine Veyrac which watches over the authentic and family spirit of the house. When appears Guillaume Veyrac, her husband and winegrower, the complementarity of the couple becomes obvious. Together, they have been leading the estate's destiny since 2001. They do so with a sense of human contact maintained by the conviviality of the farmers' markets that they usually frequent between Montech and Montauban. This natural disposition even led them to create the association Belaygu'amis dedicated to the promotion of Art and Culture around Wine and Vineyards. On this background of generosity, an approach to viticulture has been built in harmony with their cultural and humanist inclinations.

Vines and virtues

When it was acquired, the vineyard of Belaygues Castle had 20 hectares. In keeping with their convictions, Guillaume and Séverine Veyrac have chosen to reduce it to 13 hectares. First of all because the estate has turned towards organic conversion, then because the path of qualitative development of vinification was essential together. The development of a virtuous relationship with nature is at the heart of the project. The vineyard is distinguished by its nourishing grass, to which the seedlings of field beans, radish or oats contribute. They contribute to a natural enrichment of the soil favorable to the balance and the good health of the plant. Within the domain, the Négrette occupies a prominent place and even has a contingent of old vines. It is accompanied by Syrah, Gamay and Cabernet sauvignon. They generate the reds and rosés produced in designation Fronton. Viognier, Sémillon and Gros manseng, for their part, are the character of the whites that Château de Belaygues produces in IGP County Tolosan.

Wines and vinifications

The spirit of the viticultural approach is summed up by an omnipresent visual sign: the spiral. A nod to the snail farm found on the estate, it also recalls the joyous tendrils of the vine as much as it symbolizes the cyclical return of the seasons. Distinctive signature of Belaygues Castle, it can be found as a stamp on the labels of each cuvée. Among these, inaugurating the reds, Lady Négrette promises to be the all-fruit expression of 100% Négrette aged in vats. From a ten-month aging in oak barrels, the cuvée The old cellar reveals another aromatic density, associating a Négrette and a Syrah extracted by long maceration. Latest addition to the estate, the cuvée Belaygues Castle pushes even further the resources of a Négrette associated with Syrah by the use of integral and sulphite-free vinification. Saignée rosé, which often holds up well in the vineyards of Fronton, announces itself here under the name ofAiguosa which always marries Négrette and Syrah in a fruity color with salmon bursts. When the whites enter the competition, it is a dry Viognier aged on lees that makes its entry, under the name of Calixte. In a soft white version, it is the Sémillon that stands out with the cuvée 1er October. At the tasting, the profile of each cuvée reflects the openness of a house with a consistency well anchored on two virtues: sincerity and authenticity.
