A Burgundian family

Descended from winemaking families originating in Burgundy, Charles and Mireille Greuzard acquired their first vines in Minervois in 1987. After cultivating this initial plot of Carignan, located in the commune of Salèlle d'Aude, for a few years, their passion for winemaking led them beyond simply growing grapes. Determined, they acquired the Domaine de l'Herbe Sainte in Mirepeisset in 2001. Featuring a beautiful collection of buildings overlooking the banks of the Cesse River just upstream from the Canal du Midi and a notable aqueduct, this remarkable site has since become the family's ancestral home. Still in full swing, the estate exploits a range of resources that require the coordination of all family skills: Christelle is now in charge with her parents. Indeed, the Domaine de l'Herbe Sainte has about seventy-five hectares of vines in addition to four comfortable cottages and a reception room of three hundred square meters.

Varietal diversity

True to their winemaking heritage, the Greuzard family produced their first bottles in 2002. On this Minervois terroir, often characterized by its sunny climate, daughter and parents alike know how to imbue Languedoc wines with a distinctive personality. Their Burgundian background has allowed them to adapt to these southern lands a winemaking approach that prioritizes the preservation of varietal expression. It is in this spirit that they have reshaped the grape varieties of Domaine de l'Herbe Sainte , diversifying their range of white and red wines. For the whites, Chardonnay holds a prominent place, alongside Sauvignon Blanc, Colombard, and Viognier. It is clear that aromatic potential is one of the driving forces behind their winemaking in the cellar. For the reds, Syrah was the obvious choice, as were Cinsault and Grenache, but it was no surprise, given the spirit of the house, to see them coexisting with Merlot, Malbec, Cabernet Sauvignon, Marselan or even Pinot Noir.

The fruit as an expression

At Domaine de l'Herbe Sainte, a family coherence reigns supreme in every sense of the word. This is also true of the wines, where each cuvée within the same range is conceived with its own unique character and individuality. It is entirely appropriate here to speak of expressive ranges, for the white, red, and rosé wines alike. The prominence given to the IGP Pays d'Oc, which beautifully complements the AOP Minervois, is the clearest indication of this. The appellation is particularly distinguished by the flexibility and latitude it offers to single-varietal winemaking. The Harmonie range demonstrates this perfectly, with its Chardonnay, Pinot Noir, Viognier, and Malbec. Completing the collection, the Artemisia cuvée brings to the range the most seductive expressions of a beautifully crafted Syrah. From a Minervois estate , one also expects a strong expression of the terroir. This is how the skillful interplay of aging and blending produced within the AOP (Protected Designation of Origin) gives shape to the Tradition , Prestige , and Ambroisie cuvées . But it's important to remember that Domaine de l'Herbe Sainte also places great emphasis on hospitality, centered around four upscale gîtes (holiday cottages) and a spacious reception hall. This festive and hospitality aspect is undoubtedly the inspiring activity that gave rise to two unique cuvées: the first, Divine Étoile , celebrates sparkling white and rosé wines; the second, Noble Gold , exalts a Chardonnay made from dried grapes.
