Taking care of this family estate, Olivier Villaneuva continues the work of his ancestors by cultivating an understanding of life and a harmonious respect for the elements. En biodynamics, the lunar cycle and cosmic rhythms govern the vine just as much as they regulate the rhythm and gestures of the winemaker in the cellar. The biodynamic calendar, the establishment of which was born from the observations of Maria Thun, states in fact that the days follow one another without being alike. The attention paid to the cycle of the stars makes it possible to distinguish successive sequences, each endowed with its share of singularity. The fruit days » are particularly conducive to centered interventions on the fertile parts of the plant, the fruits as a priority. Taking reference from astrology, the " fruit days » are associated with the influences of the fire constellations of Aries, Leo and Sagittarius. Red Fruit Day: Mineral Pulp
Red Fruit Day is the first born of the two eponymous vintages. In red color, it has attached itself in its substance to linking the varietal expressions of the Cinsault and Syrah with the intrinsic minerality of the Faugères terroir. The wine reveals itself crisp under its brilliant color, spontaneously opening onto a nose of raspberry and crushed strawberries. On the palate, the freshness of the Cinsault blends elegantly with the spicy depth of the Syrah. Suppleness and sincerity, well-balanced structure, make it a pleasant cuvée to enjoy as a convivial aperitif. From a food and wine pairing perspective, it will perfectly accompany a tartare or a beef carpaccio that it will unashamedly enhance with its stimulating liveliness. But let's not stop there: its fresh traits will also accommodate simple cuisine such as quiches, omelets, pasta in sauce, whose tender roundness it will resonantly tickle.
White Fruit Day: the radiant juice
The cuvée White Fruit Day was also born from the meeting of two grape varieties: the Chardonnay and the MarsanneThis unique couple already announces the starry color. But their varietal rapprochement conceals another density: that which engenders the meeting of a soil clay-limestone with these folds of shale which make the reputation of FaugèresThe alliance is skillful, seductive and unique. The tension is there; it stimulates curiosity. The suspense is contained in this pale color with golden reflections that calls for the opening of the senses. The nose finds its full satisfaction there. Stimulated by the familiar evocations of pineapple and passion fruit, it is counterbalanced by these hints of mineral spices, revealing the terroir. The palate is tense as it should be, carrying a well-adjusted freshness. The call is then made to the neighboring Mediterranean.
