To the south-west of Perpignan, dominated by the silhouette of the Canigou, the appellation CĂ´tes du Roussillon Villages Les Aspres includes nineteen municipalities established between the TĂŞt valley in the north and the Tech valley in the south. It is the very latest of the appellations Coasts of Roussillon Villages. The denomination " The Aspres Â», Designates in Catalan a land with a poor and arid character. The climate of Mediterranean influence is also subject to the effects of the tramontana whose winds regularly sweep the territory. This terroir, which forms the first foothills of Canigou, is made up of terraced terraced soils where schist, rolled pebbles, sandy clays and limestone follow one another. The appellation, whose yield is limited to 42 hectoliters per hectare, is reserved for the exclusive production of red wines. At least three grape varieties among the Grenache, Syrah, Black Carignan or Mourvedre must compose its assembly. Aging of at least twelve months is required. The wines turn out to be fleshy and elegant, with good aging potential, often marked by dominant notes of garrigue and red fruits.
