Southwest of Perpignan, dominated by the silhouette of Mount Canigou, the Côtes du Roussillon Villages Les Aspres appellation encompasses nineteen communes nestled between the Têt Valley to the north and the Tech Valley to the south. It is the newest of the Côtes du Roussillon Villages appellations . The name " Les Aspres " refers to a poor and arid land in Catalan. The Mediterranean climate is also subject to the effects of the Tramontane wind, which regularly sweeps across the region. This terroir, forming the first foothills of Mount Canigou, consists of terraced soils composed of successive layers of schist, rolled pebbles, sandy clay, and limestone. The appellation, with a yield limited to 42 hectoliters per hectare, is reserved exclusively for the production of red wines. At least three grape varieties from among Grenache Noir , Syrah , Carignan Noir , or Mourvèdre must make up the blend. A minimum aging period of twelve months is required. The resulting wines are full-bodied and elegant, with good aging potential, often characterized by dominant notes of garrigue and red fruit.
